What Is MGO?
MGO is an acronym for methylglyoxal. It is a natural compound that accumulates in manuka honey as it matures. It is produced from dihydroxyacetone (DHA), a precursor that occurs in the nectar of Leptospermum flowers, and gradually transforms to MGO during storage. This compound is the secret to manuka's antibacterial properties. Regular honey doesn't carry it at any meaningful level.
Higher MGO numbers mean a more active honey. The methylglyoxal in MGO 100+ is at least 100mg per kg, a solid dose for everyday use. MGO 500+ offers a dosage of at least 500mg/kg, placing it in the therapeutic range. MGO 900+ has at least 900mg per kilogram, and it is the most potent grade available. The + on each label indicates that the honey contains more than that stated MGO level.

How Raw Manuka Honey Is Produced and Sourced
We harvest manuka honey in its purest, raw form. It is not ultra-filtered, nor combined with other imported honeys from other countries. The contents of the jar remain as they came out of the hive.
Our bees thrive in pristine Leptospermum landscapes, ideal for the healthy Australian honeybee. We partner with local farmers and Traditional Owners. This helps us keep each harvest sustainable for the land and the bees that produce every drop.
All jars are certified to food standards, including HACCP and B-QUAL, in Ballina, NSW. Manuka trees only bloom for 2-6 weeks in a year; therefore, real raw manuka honey is always in small, minimal quantities. This brief period is what makes it scarce and, in part, expensive compared to commonplace honey.
Australian vs New Zealand Manuka
For most people, when they hear the word 'manuka', they think of New Zealand. The truth is that it is the opposite way around. There are 87 species of Leptospermum (manuka) in the world, of which 84 are native to Australia. There is only one in New Zealand.
The University of the Sunshine Coast found that Australian manuka honey has up to three times more leptosperin than New Zealand manuka honey. Leptosperin is a marker found in genuine manuka honey.
So, Australia isn't a newcomer to manuka; it's the source. Most manuka species are native to Australia.

Raw Manuka Honey vs Regular Honey
Raw Manuka: Every jar of raw manuka honey is tested and certified and is genuinely rare and traceable.
Regular Manuka: By contrast, regular honey is table honey as common as table salt. However, it does not come with manuka's certified potency or manuka's traceability.

How To Use Manuka Honey
It's easy to add manuka honey to your day, and a small amount will go a long way. It is best taken first thing in the morning or on an empty stomach for absorption.

Use 1-2 teaspoons per day at MGO 100 plus or about 1 teaspoon per day at the higher strength 500+ or 900+, unless you're using it for a specific short-term application.

Add it to warm water or lemon, but not boiling water, because high temperatures (above 40°C) can decrease its natural bioactive strength.

Use it as a natural alternative to refined sugar, for example in toast, oats, yoghurt or in a smoothie.

Warm water and a spoonful of honey are soothing and coat a scratchy throat.

And for the skin, leave on for 10-15 minutes and rinse off with tepid water makes for a basic hydrating mask.
Honey storage: place the jar in a cool, dry cupboard, away from direct heat or stoves/sunny windowsills. A temperature of about 18-25°C is best. It does not require refrigeration, and the fridge may even help crystallisation to occur more quickly. Close the lid well, and steer clear of damp areas such as a bathroom. You can use it for up to 36 months.
Natural crystallisation is not a fault; it is a sign of purity. If your honey crystallises, submerge the jar in lukewarm water, and the honey will start to melt. Never microwave it. Suggested for use up to 36 months after the date of production.
Certificate of Authenticity
Independently tested at the University of the Sunshine Coast Honey Lab, Queensland, verified by Dr. Asmaa Boufridi (HPLC, 263nm). Full lab reports available on request.
Each jar is checked for four markers: MGO, DHA, HMF, and NPA, all of which are tested using gold-standard HPLC testing at 263nm, in addition to the marker compound associated with the real manuka, leptosperin. A low HMF value indicates that the honey has not been heated and is therefore considered raw and authentic, unlike other commercially produced honeys that are marketed as manuka.
Packing is done under strict food safety regulations, such as HACCP and B-QUAL; each batch is track-and-trace ready. Mustakshif honey is also Australian Raw Manuka Honey Association (AMHA) marked as genuine Australian Leptospermum honey, tested in an approved laboratory for the markers that matter.
